Calpastatin is an endogenous calpain (calcium-dependent cysteine protease) inhibitor. The calpain/calpastatin system have been described to play a important role in numerous membrane fusion events, such as neural vesicle exocytosis or red-cell and platelet aggregation.
Calpastatin plays a key role in postmortem tenderization of meat and may contribute to muscle protein degradation in living tissue.
